    Tucked into a quiet residential corner of L'Aquila's historic centre, FØRMA is an intimate contemporary restaurant with a minimalist room that means the food does all the talking. The chef keeps his dishes to three core ingredients, leaning on local Abruzzo produce and the occasional fermented note. A dessert that disguises white-chocolate mousse as meringue with a dusting of liquorice gives you the general idea: restrained until it isn't.
