This rustic family restaurant in Frómista leans hard into the Castilian pantry: game birds, venison, alubia beans from Saldaña, vegetables from Palencia. The à la carte is extensive, and three set menus offer a tidier path through the same regional cooking. Hikers and locals share the room without either group seeming out of place.
