Stone walls and archways from a two-century-old colonial inn anchor this 27-room boutique hotel in the heart of Guanajuato's cobbled centro. The original bones are intact; the king beds, pool, day spa, and terrace views over pastel houses tumbling down the mountainside are decidedly not from the 1800s. Leave the car wherever you parked it, because the winding alleys here are the whole point, and the hotel sits right in the middle of them.
