A garden gazebo for summer candlelit dinners, and a hushed, few-table dining room that earns its advance booking in winter: I Salotti is a creative restaurant anchored to its own farm, so the menu moves with what the land is doing. The wine cellar, assembled over many years, runs to more than two thousand Italian labels. Chiusi is not exactly on everyone's Tuscan itinerary, which is rather the point.
