    The open barbecue grill is the focal point of this cozy trattoria in a medieval hilltop village between Foligno and Perugia. Umbrian truffles and hyper-local produce run through the menu, with meat doing most of the talking, cooked over live fire in full view of the room. Guests staying the night in one of the comfortable rooms wake up to the same unhurried pace the valley has apparently maintained for centuries.
