Kappo Kappo is a tasting-menu counter tucked inside the Austin Proper Hotel, run by twin brothers who grew up in Paris and cook French-Japanese. It holds a Michelin star, yet it skips the hushed, monastic omakase routine. The L-shaped counter is chatty, the brothers swap life stories between courses, and the whole thing runs closer to dinner with two well-traveled hosts than a silent exam. Plan on a splurge.
