Medicinal Chinese
A counter kitchen where you sit close enough to watch the chef coax a slow-built broth from dried seafood and meat, vegetables piled in, oil held back. This is a Chinese medicinal cooking restaurant in Nishiwaseda, and every dish is shaped by the chef's training as a food therapist, meaning the food is dense with intention and surprisingly light on the palate. The crowd tends to come looking after themselves, which makes for a quietly purposeful room.
