Fine dining inside a historic Vendée manor, where the dining room mixes stone and timber with quietly contemporary touches. The chef holds a Michelin star and an MOF title, and builds his menus around local produce with enough technique to keep things interesting without turning dinner into a lecture. The front of house is warm and sharp on wine, which helps. This is very much a special-occasion room, dressed accordingly.
