Fine dining inside a vineyard estate, with two Michelin stars and a view of the Château Smith Haut Lafitte vines just outside the window. The chef has built the menu almost entirely around southwest France, from Aquitaine caviar down to Pyrenean lamb, and the Pessac-Léognan pours are treated as part of the cooking, not an afterthought. The room and the service match the ambition, which in a place this serious is never a given.
