A terrace shaded by plane trees outside an old Provençal mansion, well away from any city noise, sets the tone for what follows inside. This is a one-Michelin-star Mediterranean restaurant where the chef cooks with a restraint that reads like simplicity until you notice how precisely calibrated every texture and flavour is. The menu flatters Provence rather than the chef, which is either admirable self-effacement or very good branding. Probably both.
