Exposed beams and an open kitchen anchor this modern restaurant in a tastefully renovated old building in rural Pays de la Loire. The chef grew up on a farm and cooked his way through London, Montreal, and Tokyo, and the menu shows all of it: local produce and seafood handled with enough creative detour to keep things interesting. Pork with clams and artichokes lands in a different postcode than the surrounding countryside.
