    The chef grows much of what he cooks in biodynamic kitchen gardens, and that fact shapes every plate at this three-Michelin-star creative tasting menu restaurant in the Langhe hills. Three menus to choose from: a ten-course grand tour, a plant-forward option where meat barely shows up, and a globe-trotting menu built on his years cooking abroad. Barolo country means the wine list goes very deep, very fast.
