  1. A grand 18th-century house that once served as a summer retreat for the bishops of Lyon sets the scene for this fine-dining destination south of Vienne. The chef has held a Michelin star since the early nineties, working in a classical idiom with sharp technique and strong regional sourcing. The family has run the place for four generations, which shows in how unhurried and unstuffy it feels for somewhere this serious.
