A 19th-century mansion perched above the Loire, looking out over what used to be the shipyards, sets the scene for this Michelin-starred fine dining room in Nantes. The chef has been here forever, and the cooking leans into grand French classicism with seafood doing most of the heavy lifting. His daughter runs the floor, the wine list skews Loire, and the whole thing has a settled confidence that only comes with time.
