This is a Michelin-starred fine dining restaurant where the chef pulls Dalmatian ingredients through French technique and a few unexpected Eastern detours. The sommelier steers the wine pairings, the service is polished without being stiff, and the whole thing holds together as a coherent point of view rather than a geography lesson.
