A converted sheepfold high in a hamlet, with the original mangers still on the walls and old meat hooks overhead, makes for an unexpectedly atmospheric set-menu restaurant. The chef weaves local trout, foraged herbs, and organic saffron into multi-course dinners that also find room for lobster and wild turbot, which is to say the mountains don't keep ambition out. The Grand Marnier soufflé has become something of a signature.
