    A 1970s municipal swimming pool, raw concrete and neon lights intact, now holds a bistro where a chef who came up in Michelin-starred kitchens writes a short menu on a blackboard each week. The food runs to updated French classics, rich jus, and a béarnaise that people talk about. A collaborative space in the loosest sense, which here means lively and a little chaotic, in the good way.
