    A curved wall of bay windows frames the Alps in a way that makes the amuse-bouche feel beside the point, though it isn't. This Michelin-starred fine dining room in Crans-Montana runs a modern French kitchen with a quiet international drift, Swiss produce landing alongside miso and ponzu without anyone making a fuss about it. Evenings are full whites-and-crystal; lunch pulls back to something looser. The wine list by the glass is quietly serious.
