A restored barn on the edge of Lourdes, hung with garlic braids, chilli bunches, and saucepans, with an open kitchen at its heart. This is a table d'hôtes with a single weekly set menu built around the kitchen garden and whatever local producers have on hand. The chef cooks at his own pace and on his own terms, which in practice means deeply personal, rustic food with the kind of long-cooked jus that makes you reconsider every shortcut you've ever taken.
