Five minutes from the chalk cliffs of Étretat, this family estate turned boutique hotel and spa sits inside a nature preserve of Austrian black pines. Rooms are old-school country house in shape but decidedly not in palette, each one different, most a century old. The Nuxe spa runs to a 40-foot pool and an outdoor jacuzzi. Breakfast fills the winter garden; meals are by reservation. The Michelin Guide awarded it one Key.
