    Michel Guérard, one of the architects of nouvelle cuisine, built this three-Michelin-star restaurant inside a grand mansion in the Landes, and his kitchen team carries that legacy forward. Dinner unfolds in wood-panelled rooms that once served Napoleon III's court, with front-of-house attention so precise it borders on choreography. The cooking is light and exacting, classical French technique wearing something more elegant than it strictly needs to.
