Every room at this boutique hotel above the Bay of Aiguebelle faces the Mediterranean, designed like a ship's cabin with wood paneling and terrazzo underfoot. Jean-Baptiste Pietri's renovation brought the old Riviera landmark back with a spa, contemporary art throughout, and a dining room where murals meet sea views. Le Lavandou has better addresses, but few where waking up feels this much like being gently adrift.
