Fifteen rooms and three suites cling to a rocky hillside above the Baie de Collioure, the brown rocks at the waterline giving this small hotel its name. The current owners stripped things back to warm neutrals and a minimalist calm that somehow still feels like the south of France. Terraces step down toward the water, and the in-house restaurant pulls its own weight with Italian-leaning food and natural wines.
