A two-Michelin-star restaurant in a villa on the slopes of Montcabrer, outside a small Valencian town most GPS units give up on. The kitchen has been a family affair for generations, and the cooking leans hard into the terroir: local produce, seasonal rhythms, and the rice dishes the region lives and breathes. The signature arroz comes out of a rectangular iron tray, finished in the oven, and the wine list keeps up.
