Cristiano Tomei's creative restaurant runs on a blind tasting format where you pick the number of courses and then cheerfully lose track, which is rather the point. The kitchen has a signature obsession with bitter notes and Parmigiano Reggiano, often together, and the Bistecca Primitiva has its own devoted following.
