A small castle-like building across from the Saint-Sauveur church turns out to house a traditional French restaurant with serious local sourcing ambitions. Suckling pig from a named family farm, boudin noir, maple-glazed sweetbreads, and a flat iron steak done properly with mushrooms and red wine give the menu a distinctly Québécois accent. Lunch runs on a set formula; evenings open up to à la carte. The welcome is genuinely warm, in the way that feels earned rather than rehearsed.
