  1. Named for the balsam fir, this bright, casual bistro in the Laurentians feels like a neighbourhood spot that happened to end up somewhere very pretty. The team, with roots at Le Mousso and Le Club Chasse et Pêche, turns out modern Québécois cooking built for sharing over natural wine. The Michelin Guide gave it a Bib Gourmand, which tracks for a room where bottles circulate freely and nobody seems in any particular hurry to leave.
