Set inside a former school building, Lokaal is an elegant but genuinely warm restaurant where the name nods to both the building's past and the chef's philosophy: everything on the set menu comes from small-scale local suppliers who share a zero-waste commitment. Coffee grounds flavoring a dessert, fermented spruce paired with locally farmed trout. The Achterhoek countryside ends up on the plate in ways a classroom never quite managed.
