Pike, trout, and crayfish from Savoie's lakes and streams anchor the menu at this two-Michelin-starred fine dining restaurant outside Annecy, where the Catalan chef trained under two giants of French cuisine before settling here and making the region's ingredients his own. The cooking reads as almost effortlessly simple until you notice how much work is hiding inside it. A vegetarian menu and a gentler lunch option keep the room from feeling like it takes itself too seriously.
