A family inn in the Basque foothills where the terrace looks out over a valley deep enough to make you forget you were halfway through a meal. The dining room has been quietly refreshed but kept its rustic warmth, and the kitchen runs on local Basque produce that changes with the seasons. Slow-roasted lamb, smoked trout, a sense that this place has been feeding people for a very long time and sees no reason to stop.
