Maison Minori
Modern New American
A yellow façade on a wine-growing village street in the Côte Chalonnaise, and inside, exposed stone, a monumental fireplace, and Corten steel share the room without argument. This set-menu restaurant is the project of a Jura-born chef who spent seven years cooking in Tokyo and Kyoto, and the menu lands somewhere between Burgundian market and Japanese restraint. Shiso ice cream alongside Morteau sausage is a combination that earns its place on its own terms.
