An old farmhouse outside Gimenells that now holds a Michelin-starred dining room, where the chef opens every meal with a tasting of olive oils on house-made breads before moving to the live-fire cooking he's built a reputation around. He even engineered his own system to pull ember smoke into ingredients via steam, which is either obsessive or inspired, possibly both. The menu leans on locally grown produce and market fish.
