The Frank Gehry hotel that looks like a crumpled wine foil dropped on a Rioja hillside is the setting, and the restaurant inside leans into that drama. Chef Francis Paniego runs two tasting menus of modern Basque cooking, rooted in seasonal produce from Rioja and Álava, with one famous croquette recipe inherited from his mother that rather steals the show. Dress well; the titanium roof sets a high bar.
