The dining room at this rural Apulian masseria sits inside whitewashed stone walls thick enough to keep out the heat, and the menu leans hard into whatever the surrounding organic gardens are doing that week. Chef Giorgia Eugenia Goggi runs a set menu built mostly on vegetables, plated with enough color to look almost suspicious. A short list of natural Italian wines keeps things honest. Six rooms upstairs mean you don't have to leave, and people rarely want to.
