    High ceilings, views straight up to Vail Mountain, and a patio when the weather cooperates, this is the Colorado outpost of Nobu Matsuhisa's Japanese restaurant empire. The menu runs from composed à la carte to omakase, and on the occasional nights when Matsuhisa himself is behind the bar, regulars tend to notice. Takeout is also an option, which feels slightly surreal given the room.
