A former hardware shop in a Cévennes foothill village, now a small modern restaurant where a self-taught chef cooks alone while his wife runs the room, all Basque red and cream. The menu is ingredient-led and quietly ambitious, with a pâté en croûte that never leaves the menu, which says something about a chef who could clearly make it do whatever he wanted. Quissac is a detour, but the kind worth explaining to whoever's in the passenger seat.
