    A restored machiya townhouse tucked into Shimogyo Ward, the kind of structure Kyoto keeps insisting is the real fabric of the city. Seven rooms spread across two joined wings, each one different, each one pairing centuries-old woodwork with quietly contemporary design, and every room has a cedar bath. Breakfast is served daily, and shabu-shabu dinner can be arranged if you plan ahead. The Michelin Guide includes it among its selected hotels.
