    A soba shop where the chef mills his own buckwheat, throws the pottery the noodles arrive on, and designed the industrial interior from recycled materials, which is either admirable or exhausting depending on your temperament. The monthly seasonal soba pairs the handmade noodles with whatever the market offers, from bamboo shoots to oysters. Michelin has given it a Bib Gourmand, and the place earns it without trying to look like it cares.
