    The wine cellar sits in a vaulted space that's been around for centuries, which sets the tone for an otherwise modern Tuscan restaurant in a small Val di Pesa hill town. The kitchen riffs on regional cooking with technical confidence, and the pastry side, handled by the co-owner, has a playful streak, including a tiramisù finished with a whisper of tobacco. The wine list has grown into something serious over the years.
