A converted 19th-century town house on the edge of Cognac, now a luxury hotel whose restaurant holds a Michelin star. The chef runs surprise tasting menus drawn partly from the estate's kitchen garden, and the elegant dining room looks exactly as restored and swish as it sounds. The wine list leans thoughtfully into the region, which, given where you're standing, seems like the only sensible move.
