Nusantara by Locavore NXT

The name means "archipelago" in Javanese, and the kitchen takes that literally, pulling regional dishes from across Indonesia's 17,000 islands that rarely make it onto menus outside their home provinces. It's a stylish sit-down restaurant in Ubud, all light woods and rattan, where a brigade of Indonesian-born chefs works through traditional flavor combinations most visitors have never encountered.
