One Shot Puerta Ruzafa

Each floor of this Ruzafa hotel follows a different stage of the natural cycle, so you move from botanical wallpaper and crimson headboards on one level to terracotta cloud murals and sun-washed terraces on another. The ninth-floor restaurant, Nuvó, runs from breakfast through dinner with a Mediterranean menu and rooftop views. Ruzafa itself is one of Valencia's most restless neighborhoods, which means good bars within stumbling distance and plenty of noise if you forget to close the window.
