    A Japanese chef trained at Lameloise running a Michelin-starred creative restaurant in Dijon, folding miso and umami quietly into Burgundy's own pantry, Charolais beef, Auxonne saffron, Jura snails, and organic vegetables from a market gardener down the road. The room is calm and understated, the cooking surgically precise, and there's a vegetarian menu worth ordering on its own terms. The wine list leans into the obvious geography, which is hardly a complaint.
