The name comes from the hydrangea, a flower that changes color by season, and the kitchen takes the metaphor seriously: a Michelin-starred French restaurant in the 16th where a Japanese chef folds quiet, precise accents into a Gallic menu that shifts with the weather. The room is calm and minimal, pale wood and mirrors making the space feel larger than it is. Online bookings only, which is the modern version of a velvet rope.
