    The estate at Saiano raises the animals and works the land; what ends up on the table at this celebrated Romagna trattoria started there. The kitchen has been turning out green lasagna, piadina, and slow-braised country dishes for decades, with a chef who's become something of a local legend. The setting, inside a medieval village, leans theatrical in winter when the old theater rooms open up and the whole thing feels slightly unreal.
