  1. A long tasting counter in metallic wood faces an open kitchen inside the Hermitage Hotel, and on warm days the whole thing spills onto a garden patio with the Mediterranean as a backdrop. This is Yannick Alléno's Michelin-starred counter-dining concept, built around seasons and vegetables with seafood alongside and desserts that skip the sugar rush. The blue colour scheme nodding to the sea nearby is either very on-the-nose or very correct, depending on your mood.
