This creative tasting menu restaurant occupies a long-standing Yorkshire pub, smartly refurbished with a Nordic lean while keeping its rough-hewn bones. The cooking is hyper-local and technique-forward, opening with a broth made from vegetable scraps and building from there. Rooms are available if the narrow lanes home feel like an unreasonable ask after all that.
