    The name means "sauce" in Galician, which telegraphs the kitchen's priorities pretty clearly. This tapas bar in Lugo's old quarter runs an extensive à la carte built around the grill, with serious beef cuts and whole fish doing most of the talking. The upstairs dining room has a rustic feel, quotes from Galician writers on the walls, and an aging cabinet that signals the team's patience. Daily specials round out a menu the chef describes as "celebration, abundance, satisfaction."
