The tasting menu is called Octavo, a pointed nod to the eight arts, the seventh being cinema and the eighth, apparently, whatever Quique Dacosta is doing in Dénia. This is haute cuisine built around the Mediterranean but rethought almost completely each year, three Michelin stars and a spot on the World's 50 Best list confirming what the room already feels like: somewhere that takes the meal very seriously and expects you to as well.
