Tall mirrors and weathered wood panelling line the dining room of this Italian restaurant inside the grand old Nord-Pinus hotel on place du Forum. The chef, Antonio Altamura, keeps his menu concise and his cooking quiet, which in Arles, a town that has never lacked for drama, is its own kind of statement. On warm days the terrace opens onto the square, and suddenly it's the liveliest seat in the city.
